Chicken Enchiladas Freezer Meal

This freezer meal is for two meals. Just follow recipe and when rolling tortillas, split evenly among two freezer pans.


21 oz cream of chicken soup
2 cups salsa
1 cup sour cream
1/2 cup black beans, drained and rinsed
4 tsp chili powder
1 tsp cumin
3 lbs chicken breasts, cooked and shredded
8 oz shredded cheddar cheese
flour tortillas

Combine soup, salsa, sour cream, beans, chili powder, and cumin. In another bowl mix 2 cups of that mix with the chicken and 1 cup cheese. Fill and roll up tortillas. Place in freezer pans. Top with remaining soup mix and cheese. Cover with foil and freeze.  

To bake, cook at 350 degrees for 30-40 minutes.

Salsa Chicken Crock Pot Freezer Meal


1.5 lb chicken breast
1 1/2 cup salsa
1 can black beans, drained and rinsed
1/4 cup water
salt

To freeze, just combine everything in freezer bag and freeze. To cook, toss it all in the crock pot and cook on low for 5-6 hours. 


The first time we had this I just served it as whole chicken breasts with some veggies as a side dish. 
The second time, I added taco seasoning and served on tortillas with chips and rice.  It was lots better as tacos, but still good either way. 


Mike said I have to make tacos like this everytime.

Cheesy Chicken Tater Tot Crock Pot Freezer Meal

Happy Monday! Time for another crock pot freezer meal


32 oz frozen tater tots
3 oz bacon bits
1 lb chicken, cubed
8 oz cheddar cheese
3/4 cup milk
1/4 tsp salt
1/4 tsp pepper

If freezing, combine everything in a freezer bag with the cheese on the bottom so when you dump it into the crock pot the cheese will be on the top (mine was on the bottom of the crock pot and it was burnt).  

To cook, dump in crock pot and cook on low for 4-6 hours.

BBQ Pulled Pork Crock Pot Freezer Meal

Back again for another freezer meal. This one was really good and we had enough left over for lunch the next day. 


2 lb pork loin roast
1 bottle of bbq sauce
1/2 cup italian dressing
2 tbsp brown sugar
salt 
pepper
splash of worcestershire sauce

Combine all of the ingredients above in a freezer bag and freeze. To cook, thaw over night. toss in crock pot an cook on low for 6-8 hours. Shred and serve on buns.

Baked Ravioli Freezer Meal

I made this when I made my crock pot freezer meals, but this one is for the oven. It is amazing! 



25 oz. frozen cheese ravioli
.75 lb ground beef, cooked and drained
1 cup shredded mozzarella cheese
3-4 cups spaghetti sauce 
(I made my own sauce, and I'll share that recipe later this week)

Pour 1/2 cup sauce on bottom of pan. Place 1/3 of the ravioli on top, cover with 1/3 of the meat, 1/4 cup cheese, and 1 cup sauce. Repeat layers twice.  On the final layer, put cheese on after the sauce. Cover with foil and freeze. To bake, preheat oven to 400 degrees. Cook for 25 minutes with foil on.  Uncover and cook for 10 more minutes.

Chicken Noodle Soup Crock Pot Freezer Meal

I'm back for another crock pot freezer meal

1 lb chicken breasts, cubed
1/2 lb carrots, peeled and diced
1 cup celery, diced
1 onion, diced
1 tsp garlic powder
1 tsp basil
1 tsp oregano
1 bay leaf
1/4 tsp pepper
8 oz egg noodles
8 cups chicken broth

If freezing combine all ingredients except for the noodles and broth in a freezer bag and freeze. To cook, dump bag and add chicken broth. Cook on low for 6-8 hours. Add the noodles and cook for 30 more minutes or until pasta is cooked through. Remove bay leaf and enjoy!

Turkey Black Bean Chili Crock Pot Freezer Meal

Here's another freezer meal that I prepared a while ago. 


1.2 lbs ground turkey
30 oz black beans, drained and rinsed
2 large carrots, peeled and shredded
28 oz tomato sauce
14.5 oz petite diced tomatoes, undrained
1 2/3 cup frozen corn
2 cloves garlic, minced
1 Tbsp paprika
1 Tbsp chili powder
2 tsp ground cumin
1 1/2 tsp ground oregano

If freezing just combine all ingredients into freezer bag and freeze. 


To cook, dump everything into crock pot and cook on low for 8 hours. Break up turkey before serving. I put some cheddar cheese on top. It was so good!

Cheesy Tortellini with Ground Beef Crock Pot Freezer Meal

Back for another crock pot freezer meal.


1 lb lean ground beef
1 small onion, diced
2 cloves garlic, minced
28 oz crushed tomato
10 oz diced tomatoes & green chilies, undrained
1/2 tsp oregano
1/2 tsp basil
1/4 tsp salt
1/4 tsp pepper
19 oz frozen cheese tortellini
1 cup mozzarella cheese

If freezing, combine everything except the tortellini and mozzarella cheese in a freezer bag. 


To cook, just dump everything except tortellini and mozzarella in crock pot and cook on low for 8  hours.  Add tortellini and cheese and cook for 15-30 more minutes until tortellini is cooked.

Chicken Cacciatore Crock Pot Freezer Meal

It's time for the first recipe in part 3 of my crock pot freezer meals. This recipe was delicious. I doubled the recipe to make 2 meals and we've actually eaten both of them already.


2-3 Chicken Breasts
1 onion, sliced
1 green bell pepper, sliced
28 ounces crushed tomatoes
29 ounces diced tomatoes
3 cloves garlic, minced or crushed
1 Tbsp dried basil
1 tsp pepper
1/2 tsp salt

(the above ingredients make one meal, I doubled mine and froze it in 2 bags)


To freeze just combine all ingredients in a freezer bag and freeze. Thaw in refrigerator the night before. 

To cook, just toss it all in the crock pot and cook on low or medium for 6 hours. Serve over pasta.

Crock Pot Freezer Meals Part 3

I'm back for another round of crock pot freezer meals. I've done two of these previously- here and here


This time I purchased all my ingredients at Aldi's for only $225 and ended up with 20 meals. I made a few other freezer meals too, but they're not for the crock pot so I'll post those separately.

Crock Pot Freezer Meal Golden Chicken & Noodles

The crock pot freezer meals I made a few weeks ago are running out. =(  I have another list of some that I want to try, but it will probably be a few more weeks before I get them all prepared.  Today's recipe is golden chicken & noodles. I made this the other day, but we ended up going shopping and just ate dinner out so I threw it into the fridge and just warmed it up the next night. It was delicious.


4-5 large boneless, skinless chicken breasts
 10 3/4 oz can broccoli cheese soup
1 Cup milk
1 tsp salt
1 tsp basil
1 tsp pepper
Extra Wide Egg Noodles (used on day of serving)


On cooking day, just dump bag into crock pot and cook on low for 5-7 hours.

Cook pasta al dente' and mix in before serving.

Crock Pot Freezer Meal Chicken Broccoli Alfredo

Ready for another crock pot freezer meal? This recipe was delicious. The broccoli was in smaller pieces so it was easily hidden from the kiddos and I so we ate it with no complaining.

1 ½ pounds chicken breasts
1 (16 oz) bag frozen broccoli florets
2 (16 oz) jars Alfredo sauce
pasta (on cooking day, do not freeze)


To freezer, just put all ingredients (except pasta) in a gallon freezer bag. 


On cooking day, thaw for 24 hours ahead of time.  Pour into crock pot and cook on low for 4-6 hours. Cook pasta al dente and mix in before serving.

Crock Pot Freezer Meal Bean Tater Tot Casserole

Here's another crock pot freezer meal that I prepared last week.  This recipe says its for 2 meals, but I only made one with it. We each had 2 helpings and then Mike had some for work the next day.

1 lb ground beef, browned and drained
1/2 tsp salt
1/4 tsp pepper
1 lb string beans, fresh or frozen
1 10 3/4 can cream of potato soup
1 cup shredded cheese
21 oz bag frozen tater tots


Split all ingredients in half and place in 2 bags. Lay flat and freeze. Day of cooking grab from freezer, pour all contents into crock pot and cook on high 2-3 hrs or low 4-6 hours.

Crock Pot Freezer Meal Tortilla Soup

I'm back sharing my second recipe from my crock pot freezer meals I prepared last week.  This recipe was pretty good, but it was more of a chili consistency than soup. Either way it was good.


1 lb ground turkey
1 can crushed tomatoes
8 oz frozen corn
1 can black beans
1 can pinto beans
taco seasoning (on cooking day)

To freeze, just mix all ingredients and pour into gallon freezer bag.


On cooking day, add one cup water, taco seasoning to taste and cook on low for 4-6 hours or until turkey is completely cooked.

Crock Pot Freezer Meal Creamy Ranch Pork Chops & Potatoes

On Friday I posted about part two of crock pot freezer meals. Here's the first recipe we tried out. It was really good. Let me know what you think if you try it out.


1 1/2 pounds boneless pork chops
3-4 medium potatoes, chopped in large pieces (I sliced mine)
1 can cream of chicken soup
1 packet ranch powder mix
1/2 cup milk

To freeze, just mix all ingredients together and pour into a gallon size freezer bag. 


On cooking day, just thaw for 24 hours before putting in crock pot and cook on high for 3-4 hours or low for 6-8 hours.

Crock Pot Freezer Meals- Part 2

I'm back for part 2 of Crock Pot Freezer meal recipes. I did part one last year and it was amazing. It was so nice to just grab a bag from the freezer and toss it in the crock pot and continue with the rest of my day.

This time around I gathered 5 recipes to try out. I try to find recipes that have similar ingredients so it cuts down on my grocery spending. Then I just space them out when eating them so we're not eating chicken 6 days in a row.  Here's what I made-





*Edit* Since I was using my crock pot almost every day for a week, I bought these Reynold's Slow Cooker Liners.   It was so nice to just put the leftovers away, grab the liner, toss it in the trash and not have to wash the crock pot every night.

Freezer Breakfast Wraps

When we stop at dunkin donuts I usually get a wake up wrap instead of a donut.  I decided to make them at home to cut some costs and to also give me a quick breakfast to throw in the microwave and go. 


All you need is some cheese, some sausage patties and tortilla shells. You could also add eggs or anything else you like. 


First I cooked all the sausage. Then I cut the tortillas in half and put cheese and a sausage patty on each side. Folded them up and they were all done.   I wrapped them up individually and tossed them in the freezer.  To reheat, just put in microwave for 45-60 seconds or until warm.
