Potato Bacon Soup Crock Pot Freezer Meal


bag frozen cubed hash brown potatoes
bacon bits
2/3 cup butter
2/3 cup flour
4 cups chicken broth
3 cups milk
4 green onions, chopped
1 1/2 cup shredded cheddar
2 oz velveeta cheese, cubed
1 cup sour cream
1 tsp salt
1 tsp pepper

To freeze, divide all ingredients between two bags and freeze. To cook, thaw and dump into crock pot. Cook on low for 4-6 hours.

White Chicken Chili Crock Pot Freezer Meal


2 lbs. chicken breasts
4 cups chicken stock
2 cans white beans, drained
1 can chopped green chilis, drained
4 Tbsp olive oil
2 Tbsp corn starch
4 tsp cumin
4 tsp chili powder
2 tsp salt
2 tsp pepper

Split between two freezer bags and freeze all ingredients.  To cook, thaw and cook in crock pot on low for 4-6 hours. Shred chicken and serve.

Chicken Noodle Soup Crock Pot Freezer Meal

I'm back for another crock pot freezer meal

1 lb chicken breasts, cubed
1/2 lb carrots, peeled and diced
1 cup celery, diced
1 onion, diced
1 tsp garlic powder
1 tsp basil
1 tsp oregano
1 bay leaf
1/4 tsp pepper
8 oz egg noodles
8 cups chicken broth

If freezing combine all ingredients except for the noodles and broth in a freezer bag and freeze. To cook, dump bag and add chicken broth. Cook on low for 6-8 hours. Add the noodles and cook for 30 more minutes or until pasta is cooked through. Remove bay leaf and enjoy!

Turkey Black Bean Chili Crock Pot Freezer Meal

Here's another freezer meal that I prepared a while ago. 


1.2 lbs ground turkey
30 oz black beans, drained and rinsed
2 large carrots, peeled and shredded
28 oz tomato sauce
14.5 oz petite diced tomatoes, undrained
1 2/3 cup frozen corn
2 cloves garlic, minced
1 Tbsp paprika
1 Tbsp chili powder
2 tsp ground cumin
1 1/2 tsp ground oregano

If freezing just combine all ingredients into freezer bag and freeze. 


To cook, dump everything into crock pot and cook on low for 8 hours. Break up turkey before serving. I put some cheddar cheese on top. It was so good!

Crock Pot Freezer Meal Tortilla Soup

I'm back sharing my second recipe from my crock pot freezer meals I prepared last week.  This recipe was pretty good, but it was more of a chili consistency than soup. Either way it was good.


1 lb ground turkey
1 can crushed tomatoes
8 oz frozen corn
1 can black beans
1 can pinto beans
taco seasoning (on cooking day)

To freeze, just mix all ingredients and pour into gallon freezer bag.


On cooking day, add one cup water, taco seasoning to taste and cook on low for 4-6 hours or until turkey is completely cooked.

Crock Pot Tuscan Soup

Usually anything that is able to be made in the crock pot gets pinned on my Pinterest board. I love using my crock pot.  I don't make too many soups, but I'm so glad I decided to make this one.



One (12-ounce) package of turkey or chicken sausage, sliced
2 cloves garlic, minced
1 small onion, chopped
3 celery stalks, chopped
4 cups kale, stems removed, & leaves chopped 
3 cups chicken broth
One can red kidney beans, rinsed & drained
One can great Northern beans, rinsed & drained
One can Italian seasoned diced tomatoes
1/2 cup water
1 tsp. dried basil


Put all above ingredients into crock pot and mix together.  Cook on low 8-10 hours or until veggies are tender.

Tortellini Chili

I loved that this recipe was easy to prepare and was pretty delicious. It had more of a soup consistency to it than chili, but it was still good.  AND it made me decide that next time I make my lasagna soup, instead of noodles I am going to use tortellini. YUM! 


1 lb. tortellini
2 tablespoons extra virgin olive oil
1 cup chopped onion
2 tablespoons fresh minced garlic
1 lb. ground beef
32 ounces chicken broth
15 oz can rotel
1 can red beans
1 can black beans
2 tablespoons ground cumin
1/4 teaspoon garlic salt
1 1/2 tablespoons chili powder
1/2 teaspoon salt
1/4 teaspoon pepper


Cook tortellini according to package directions.  Pour olive oil in a pan and add in onions and garlic. Saute for a few minutes.  Add ground beef and cook until browned. Drain beef and tortellini.  In a large pot mix meat, broth, tomatoes, beans, cumin, garlic salt, chili powder, salt and pepper. Stir in tortellini.  Heat for 10 minutes until hot.

Lasagna Soup

It's been really cold here lately. Like 40 below zero cold. So that means soup time!  This recipe has a lot of ingredients but didn't take long to cook at all.  It was delicious but my noodles were a little chewy. The original recipe suggests cooking your noodles separately and placing them in bowl then pouring the soup over top. Might try that next time.



2 tsp. olive oil
1-1/2 lbs. Italian sausage
3 cups chopped onions
4 garlic cloves, minced
2 tsp. dried oregano
2 tbsp tomato paste
1 28-oz. can diced tomatoes
6 cups chicken stock
8 oz. pasta
8 oz. ricotta
2 c. shredded mozzarella cheese


Heat olive oil in a large pot over medium heat. Add sausage, breaking up into bite sized pieces, and brown.  Add onions and cook until softened. Add garlic and oregano. Cook for 1 minute. Add tomato paste and stir well to incorporate. Cook for 3 to 4 minutes.  Add diced tomatoes and chicken stock. Stir to combine. Bring to a boil and then reduce heat and simmer for 30 minutes.  Add uncooked pasta and cook until al dente.  Put a small amount of ricotta in each bowl and pour soup over top.  Sprinkle with mozzarella cheese.

Chicken Taco Chili Crock Pot Freezer Meal

I'm finally back with another one of my freezer meals.  When I assembled all my meals I ran out of chicken, so I just froze it without and made a note on the bag to add chicken before cooking.

1 can black beans
1 can kidney beans
1 can corn
16 oz tomato sauce
28 oz diced tomatoes
1 packet taco seasoning
1 tbsp chili powder
3 boneless skinless chicken breasts

Toss it all in the crock pot. Cover and cook on high for 8 hours or low for 12 hours.

Shred chicken before serving.

Chicken and Noodle Soup

With the weather warming up I've starting searching for crock pot meals so I don't have to turn on the oven and heat up the house. I've had this recipe on my menu for a while and finally decided to give it a try the other night. It was pretty good, but I would say it's more of a entree than a soup since it was pretty creamy.


5 cups of chicken broth 
One 10.75 oz can cream of chicken soup
1/2 cup onions, chopped fine
One 15 oz can of whole kernel corn, drained
Salt and Pepper to taste
1 1/2 cup Egg noodles
2 cups cooked chicken chopped or 2 cans canned cooked chicken


Combine everything except the noodles in the crock pot. Cook on low for 4-5 hours. Turn crock pot to high, add the noodles and cook for another hour. 


It smelled so good while cooking. But see how there's no soupy-ness to it? It was still really good though.

Crock pot Zuppa Toscana

Zuppa Toscana is one of the best soups you can get. If you don't know what it is, it's the potato soup from Olive Garden!!  When I found a recipe to make it in the crock pot I knew I had to make it asap!


1 lb. Italian sausage 
2 large russet baking potatoes, sliced in small pieces
1 large onion , chopped
¼ c. bacon bit (optional)
2 garlic cloves , minced
16 oz. can chicken broth
4 cups water
2 c. kale or 2 c. swiss chard , chopped
1 c. heavy whipping cream


Brown your sausage. If there's any grease drain that off. 


Place sausage, chicken broth, water, onions, potatoes, and garlic in slow cooker. Add your bacon now too if you want bacon in yours.

Cover and cook on high for 3-4 hours or until potatoes are soft.  

Add kale and whipping cream. Mix and serve. 


SO GOOD!! I actually doubled the recipe and it filled my crock pot to the top. We each had a bowl and it barely made a dent so I have lots in the freezer. It didn't taste exactly like Olive Garden's, but it was still really good.

Crockpot Potato Soup- Take 2

I posted back in December that I was on the hunt for the perfect potato soup. I found another recipe on Pinterest and of course since I love potato soup I decided to give it a try. It was pretty similar to the recipe I tried before, but I liked this recipe much better. 


30 ounce bag of southern style hashbrowns
1 medium/large yellow onion, diced
64 ounces (8 cups) chicken broth
16 oz cream cheese, softened (I only used 8oz)
1 tablespoon seasoned salt 
optional garnishes: crumbled bacon, shredded cheese, green onions


Combine all ingredients except for the cream cheese in your crock pot. Cook on high for 6 hours or low for 10 hours. 


Put cream cheese in blender and fill with soup. Blend for about 30 seconds. 


Pour cream cheese mixture back into crock pot and mix well. 



Added some bacon and cheese. 

It was so good. This recipe filled the entire crock pot so I have 4 containers in the freezer.

Italian Sausage Crock Pot Soup

We've been having a lot of chicken for dinner lately. Also since it's been cold I decided to add a nice warm soup to our dinner line-up. I had some italian sausage in the freezer that I got on sale for $1 a while ago so I decided to make this italian sausage soup for dinner. Of course, on the day I decided to make it, it was 50 degrees out, but it was still really good!


Sausage Meatball Ingredients
1 pound mild Italian sausage, casings removed
1/2 cup dried bread crumbs
1/4 cup grated Parmesan cheese
1/4 cup milk
1 egg
1/2 teaspoon dried basil
1/2 teaspoon black pepper
1/4 teaspoon garlic salt


Soup Ingredients 
4 cups hot chicken broth
1 tablespoon tomato paste
1 clove garlic, minced
1/4 teaspoon red pepper flakes
1/2 cup pasta
Grated Parmesan cheese
salt to taste


Mix all the meatball ingredients together. Form into small balls. 


Combine broth, tomato paste, red pepper flakes, and garlic in crock pot. Add meatballs. Cook on low for 5-6 hours. 


Thirty minutes before serving add pasta.  Sprinkle parmesan cheese on top when serving. 


It was amazing! I think I used to much pasta (I didn't measure) so there wasn't much broth, but it was still delicious.

Crockpot Potato Soup

I LOVE me some potato soup. I am always trying different recipes in search of the best one. This recipe is pretty good.

1- 30 ounce bag hash brown potatoes (I used the cubed ones)
3- 14 ounce cans of chicken broth (for some reason I only bought 2 at the store so that's what I used)
1- can cream of chicken soup
1/2 cup chopped onion
1 package cream cheese
pepper



Put everything in the crock pot except for the cream cheese. Cook on low for 6-8 hours. Add cream cheese 1 hour before serving. Mix well until cream cheese melts.



Like I said I love potato soup, however, this wasn't the perfect recipe. My search continues...
