Western Beef Casserole Crock Pot Freezer Meal


2 lbs ground beef, browned and drained
16 oz kidney beans, drained and rinsed
16 oz can corn, drained
10.75 oz can tomato soup
1 cup shredded cheddar
1 onion, chopped
1/2 tsp ground chili powder
1/4 cup milk

Combine everything in a freezer bag and freeze. Cook in crock pot on low for 4 hours. 


This was pretty good. Reminded me of chili but a bit thicker.

Spaghetti Sauce & Meatballs Freezer Meal


Meatball Recipe

1 3/4 lb ground beef
3/4 cup parmesan cheese
1/2 cup breadcrumbs
4 cloves mince garlic
2 Tbsp basil
3 Tbsp parsley
2 tsp seasoned salt
2 eggs

Mix everything together (using your hands works best)  Form into balls and place on baking sheet. Bake at 400 degrees for 15-20 minutes. Let cool and divide into freezer bags and freeze.


Spaghetti Sauce Recipe

7- 28 oz cans of crushed tomatoes
6-8 cloves of garlic, chopped
1/4 cup grated parmesan cheese
4 Tbsp basil
2 tsp pepper
1 tsp sugar
2 Tbsp olive oil

Heat olive oil in a saucepan. Add garlic. Heat for a few minutes. Add tomatoes, pepper, basil, and sugar. Stir often until it starts to boil. Reduce heat and simmer for 2-3 minutes. Add cheese and simmer for 5 more minutes. Divide into freezer bags.


To cook the meatballs and sauce, just thaw overnight and then simmer for about 20 minutes. Serve with spaghetti noodles.

Sloppy Joe Corn Bread

I made this recipe a while ago when I was on a cornbread kick. It was pretty delicious and a nice twist on sloppy joes. 


1 pound ground beef
1 can sloppy joe sauce
1 (8.5 oz) box Jiffy corn muffin mix
1/3 cup milk
1 tablespoon vegetable oil
1 egg
1/2 cup cheddar cheese, shredded


Preheat oven to 350 degrees. Brown and drain ground beef.  Mix in sloppy joe sauce.


Combine corn bread mix, milk, oil and egg. 

Spread meat into 8x8 baking dish. Pour cornbread mix on top. 


Bake at 350 degrees for 25-35 minutes.







Cowboy Casserole

I haven't blogged anything in almost 10 months. Crazy how life gets so busy and things get put aside. I have lots to update, but this recipe will come first.


1 1/2 pounds ground beef 
1 medium onion, chopped
1 can condensed cream of mushroom soup
1/2 cup milk
4 tablespoons sour cream
1 can (15.25oz) whole kernel corn, drained
2 cups cheddar cheese, shredded
1 bag (30 oz) frozen tater tots


Preheat oven to 350 degrees. Brown and drain ground beef and onion.  Mix together the soup, milk, and sour cream until smooth. Add to meat mix and combine well. Stir in the corn and 1 cup of cheese. 

Grease bottom of 9x13 baking dish. Layer half the tots on the bottom. Pour meat mixture on top. Cover with remaining tots and remaining cheese. Bake at 350 degrees for 25-30 minutes.

Crock Pot Freezer Meal Bean Tater Tot Casserole

Here's another crock pot freezer meal that I prepared last week.  This recipe says its for 2 meals, but I only made one with it. We each had 2 helpings and then Mike had some for work the next day.

1 lb ground beef, browned and drained
1/2 tsp salt
1/4 tsp pepper
1 lb string beans, fresh or frozen
1 10 3/4 can cream of potato soup
1 cup shredded cheese
21 oz bag frozen tater tots


Split all ingredients in half and place in 2 bags. Lay flat and freeze. Day of cooking grab from freezer, pour all contents into crock pot and cook on high 2-3 hrs or low 4-6 hours.

Sloppy Joe Tater Tot Casserole

Here's another recipe that is inexpensive, quick to throw together and the kids will also like it.


1 lb ground beef
1 can sloppy joe sauce
16 oz frozen tater tots
2 cups shredded cheddar cheese

Preheat oven to 450 degrees. Brown ground beef and drain. Mix in sloppy joe sauce and simmer. 


Pour the meat into the bottom of a baking dish. Top with cheese.  Spread tots in a single layer on top.  Bake at 450 degrees for 20-25 minutes or until tots are browned.

Crock Pot Bacon Cheeseburger Casserole

With Marley being back in school it puts us on a schedule that we totally lacked over the summer.  Mason takes an almost three hour nap every day so I get lots done, but once Marley gets home from school the pressure is on. Finish homework, make dinner, baths, bedtime routine all in 4 hours. It can be a lot.  Relying on my crockpot saves the day a lot of time.  This recipe was thrown together during nap time and ready at dinner time so we could stay on schedule.


2 lbs of frozen hashbrowns, thawed
2 lbs of ground beef, browned and drained
10 oz of bacon bits, real bacon
2 c of milk
3 c of cheddar cheese, shredded
3 T of butter, melted


Mix all ingredients together in a bowl. Pour into crock pot and cook on low for 4 hours.


It was really good even though it's presentation isn't very pretty.

Mexican Cornbread Casserole

One day while searching pinterest I decided to search for cornbread casseroles. I found and ton and pinned them all. I really like corn bread, probably more than I like just regular biscuits.  This recipe was the first on my list to make.  


1 box corn muffin mix
1 egg
1/3 cup milk
1/2 lb ground beef
10 oz. can rotel original diced tomatoes & green chilies, drained
1/2 tsp ground cumin
1 c shredded cheese (I used nacho & taco)

Preheat oven to 375 degrees.  Spray baking dish with non stick spray.  In a bowl, stir together corn bread mix, egg, and milk.  Spread onto bottom of baking dish. 


Brown and drain ground beef.  Stir in tomatoes and cumin.


Spread ground beef mix over corn bread in dish.  Top with cheese. Bake at 375 for 15-20 minutes or until cornbread is done.

Taco Pizza

I made this recipe a while ago, but since I am making it for dinner tonight and haven't shared it yet, I decided to write up the post and share it with you. It obviously was good since I'm making it again and it was quick too.  


1 lb. ground beef
1 envelope taco seasoning mix 
(I made my own taco seasoning about 6 months ago that I use all the time)
8 oz. can crescent rolls
16 oz. can refried beans 
2-3 cups shredded cheddar cheese
1/2 cup chopped tomatoes


Brown and drain ground beef. Mix in taco seasoning as directed on packet. Preheat oven to 375 degrees. Unroll crescent rolls and spread flat on baking sheet. Bake at 375 for 11-13 minutes. 


Spread refried beans on top of crescents.  Evenly spread meat on top of beans.  


Add cheese and tomatoes and any other toppings you want. Return to oven for a few more minutes to melt the cheese.

Burrito Bake

A friend of mine pinned this recipe on pinterest and as soon as I saw it I was off to the store to get the ingredients. It was very good and I don't think we had any leftovers.


1 lb ground beef
1 package taco seasoning 
(I made my own taco seasoning a while back)
10 ounce can refried beans
1 cup bisquick
1/4 cup water
1 cup cheddar cheese
1 cup shredded mozzarella cheese


Preheat oven to 350 degrees. Brown and drain ground beef. Stir in taco seasoning. Mix beans, bisquick, and water together in a bowl. 


Spread bisquick mixture in a baking dish. Cover with meat. Top with cheese. Bake at 350 for 30 minutes.

Enchurritos

I like to cook, but sometimes I like to take the easy route, but still make it feel like I cooked a nice meal for the family. This is one of those meals. Of course, you could make your own burritos, might cost a little bit more, but made to your liking.  


Frozen burritos
1 can enchilada sauce
cheddar cheese

Preheat oven according to burrito package directions.  Place burritos in baking dish. Pour sauce over top and cover with cheese.  Bake according to the package directions. 



Very quick and very good.

Taco Braid

I loved the spaghetti bread I made before so when I saw this recipe for taco braid I knew I wanted to make it.  It was very good, but spicy, I think next time I will just use diced tomatoes without the green chilis in there.


1 pound ground beef
taco seasoning 
1 can rotel tomatoes- drained
1 can black beans- drained and rinsed
2 cans crescent rolls

Preheat oven to 350 degrees.  Brown and drain ground beef. Mix with taco seasoning, tomatoes, and beans.  Spread out the crescents on a cookie sheet, but don't separate them. Press seams together to form one piece.  Place meat mixture in the middle and make one inch strips on each side of meat.  



Fold over dough in a braid. Bake at 350 degrees for 20-25 minutes.  Let sit for 5-10 minutes before cutting.
