Crock Pot Chicken Quesadillas

I haven't made quesadillas in a while. I had one of those fancy quesadilla maker things, but someone decided to make a cookie in it and when that didn't work out so well we had to throw it away. I don't know why I never thought to make them on the griddle, but it worked out well.


1 small cans green chilis, diced
12 oz jar salsa 
1 teaspoon ground cumin 
2 pounds boneless, skinless chicken 
salt and pepper, to taste 
shredded cheese



Place chicken in crock pot. Place remaining ingredient (except cheese) on top. Cover and cook on low for 6-8 hours. 


Once done cooking shred chicken.  Place tortillas on griddle and top with cheese and chicken mix. Top with another tortilla and flip to cook to your liking.

Crock Pot Chicken Taco Bowls

Marley told me a few months ago that the food I make is 'unique.'  I guess you could say she is right, I never just make plain beef tacos or plain hot dogs on buns. So in true mom fashion I cooked up these taco chicken bowls.  They were delicious and we didn't have any leftovers.


1½ lbs. chicken breasts
1 (16 oz.) jar salsa
1 (15 oz.) can black beans, drained
½ lb. (8 oz.) frozen corn
1 Tbsp chili powder
½ Tbsp cumin
½ Tbsp minced garlic
½ tsp dried oregano
¼ tsp salt
1/4 cup water
2 cups dry rice
8 oz. shredded cheddar


Add everything except the rice and cheese to the slow cooker. Mix it all together. Cover and cook on low for 8 hours. Cook the two cups of rice according to the package directions. Shred the chicken but don't remove it from the crock pot. Build the taco bowls by placing rice on the bottom, then the taco chicken mix and top with the shredded cheddar cheese.

Crock Pot Parmesan Ranch Mushrooms

I don't like mushrooms at all, but I decided to be nice and make this recipe for Mike the other day. I imagine these would be good to bring to a pot luck or as an appetizer at a party.



1/2 cup butter
1 packet of ranch powder 
mushrooms
2 tsp parmesan cheese

Melt butter and mix in the ranch powder.  Place mushrooms in crock pot. Pour melted ranch butter over top and sprinkle with parmesan cheese. Cook on low for 4 hours.

Crock Pot Pork Chops, Potatoes & Corn

I love using my crock pot and since this recipe wasn't for chicken, which I make a lot, I knew I wanted to try it out asap!  It was also nice to have sides prepared at the same time without any extra dirty dishes or time.


Pork chops
potatoes
corn on the cob
1 can cream of mushroom soup

Place pork chops on bottom of crock pot and cover with mushroom soup.  


Wrap potatoes in aluminum foil and place on top of chops.  Wrap corn in foil and place on top of potatoes. Cover and cook on low for 6 hours. 



Everything was cooked perfectly. I was quite amazed.

Crock Pot In a Hurry Chicken Curry

Here's another recipe from my personal collection. This could probably be prepared ahead of time and frozen, then just dumped in the crock pot. It doesn't look for appealing, but it was pretty tasty.


16 oz bag frozen mixed veggies
4-6 boneless skinless chicken breasts
1 can cream of potato soup
2 tbsp curry powder


Place veggies in crock pot.  Place chicken on top.


 In a bowl mix soup and curry powder. Pour in crock pot. Cover and cook on low 6-7 hours.

Creamy Italian Chicken Crock Pot Freezer Meal

Back for another freezer meal.  If you're not going to freeze it all you have to do is dump all the ingredients into the crock pot. If you are going to freeze it, just dump all ingredients into a freezer bag and freeze. On cooking day just thaw it out and pour it into crock pot. Super easy!


4-6 chicken breasts
8 ounces cream cheese
1 can cream of chicken soup
1 packet italian dressing powder mix

Dump all ingredients into crock pot and cook on low for 4-6 hours.

Crock Pot Italian Chicken Freezer Meal

Back for another crock pot freezer meal that I prepared back in June.

4 boneless skinless chicken breasts
16 oz bottle italian dressing
1/2 cup parmesan cheese
4-6 diced potatoes
1/2 bag baby carrots



Just toss all ingredients into the crock pot and cook on low for 8-10 hours. If preparing to freeze, just put them all in a gallon size freezer bag and freeze, then when you want to cook it just thaw it a little and toss it in.




Super easy to make and very delicious!

Crock pot Italian Lemon Chicken

I've had this recipe on my pinterest board for a while, but it just got thrown together at the last minute one night. It was pretty good too so that's always good. 


4-6 chicken breasts, boneless & skinless
1 packet of italian dressing mix
butter
lemon juice


Put cube of butter in bottom of crock pot.  Lay chicken in and sprinkle with italian dressing packet.  Drizzle lemon juice over top. Cover and cook on high 4-5 hours or low 6-8 hours. 



This was pretty good. It had a lot of italian dressing flavor though.  Perhaps next time, I'll mix the lemon juice and italian dressing powder together then pour over the chicken.

Crock pot Freezer Meal Chicken Tacos

It's time for another freezer meal.  This time it's Crockpot Chicken Tacos.  After dinner Mike said these are the best tacos ever!


1 packets taco seasoning
1 jar salsa
6-8 chicken breasts (I used small chicken breasts and used 7 and it made enough for about 10 tacos)

Combine all ingredients in crock pot and cook on low for 8 hours or high for 6.  Remove chicken and shred, return to crock pot for a few more minutes before serving.




Since I made mine before and froze it, I just tossed it all in the bag and froze it.  Then just put it in the fridge to thaw overnight and poured it into the crock pot. Super easy!

Crock Pot Pizza Burgers

I made these a few months ago and thought I had deleted the pictures (which aren't great, but better than nothing) But the other day I found them and since these were AMAZING I had to share them. 


1 lb ground beef, browned and drained
8 oz can pizza sauce
10 3/4 oz can cream of mushroom soup
1/2 cup chopped onions
1/4 tsp salt
1/8 tsp pepper
cheddar or mozzarella cheese


Mix all ingredients in the crock pot. Cover and cook on low for 1-2 hours. You could also cook the ground beef in the crock pot on low until no longer pink, drain, and then mix in the remaining ingredients.  

I sprinkled mozzarella cheese on top of mine before eating to make it more "pizza like"

Chicken Taco Chili Crock Pot Freezer Meal

I'm finally back with another one of my freezer meals.  When I assembled all my meals I ran out of chicken, so I just froze it without and made a note on the bag to add chicken before cooking.

1 can black beans
1 can kidney beans
1 can corn
16 oz tomato sauce
28 oz diced tomatoes
1 packet taco seasoning
1 tbsp chili powder
3 boneless skinless chicken breasts

Toss it all in the crock pot. Cover and cook on high for 8 hours or low for 12 hours.

Shred chicken before serving.

BBQ Pineapple Pulled Pork Crock Pot Freezer Meal

Back with another crock pot freezer meal. This recipe scared me a little because I've never cooked a pork shoulder. I usually only make pork chops. If we want pulled pork I just buy the containers of it premade.

4-6 pound pork shoulder
all purpose seasoning
1 bottle bbq sauce
15 oz can pineapple, undrained


Dump it all in the crock pot and cook on high 6-8 hours or low 10-12.


 Shred pork and return to crock pot for 10 more minutes. Serve on burger buns.

To freeze it, just mix it all together in a freezer bag and lay flat to freeze.



It smelled amazing and tasted pretty darn good too.  It seemed a little tough and not as stringy as pulled pork at restaurants though, but still good.

Cheddar Vegetable Sausage Casserole Crock Pot Freezer Meal

This recipe is one that I made the other day when I made all my crock pot freezer meals. It didn't last very long in the freezer, but it was nice to just pull it out, thaw it a little, and pour it in the crock pot.


10 ounces frozen vegetables
3 large diced potatoes
sausage
1 can cheddar cheese soup
1 can cream of celery soup
1 cup shredded cheddar cheese


Just mix it all up and put it in the crock pot on low for 8 hours. If it's not frozen then 6 hours should be good.



Since I was freezing mine, I just mixed everything together in a medium sized bowl then poured it into a freezer bag and froze it laying flat.




It was pretty tasty. It didn't end up looking how I imagined it would look, and I think for next time I want to try it with pasta instead of potatoes.

Crock Pot Freezer Meals

When we have nice weather we spend a lot of time outside. Before I know it, it's 8pm and I haven't even thought about dinner. I decided the other day to make up some freezer meals and since I can't start cooking at bed time, I decided to make some crock pot meals so that I could just throw them in and continue on with my day. I went shopping for all my ingredients and then when everyone was in bed I started assembling. It took me about 2 hours to put everything together and clean up so that's not bad at all.  I tried to pick recipes that were more summery and that the kids would also like so I didn't have to make 2 meals every day.  I searched on pinterest for a while and gathered up my 7 recipes from several different pages.

I made- 

I labeled all my freezer bags with what's inside and how long to cook them so I don't have to pull the recipe out when I decide to make them.  I also wrote any other notes like add water or shred chicken once cooked. After the bags were full I laid them flat to freeze. Once they're frozen I can stand them up in my deep freezer and they don't take up as much space this way.


I will post individual recipes and more pictures once I cook them up, but for now, do you have any good freezer meals to share?

Crock Pot Turkey Potato Dinner



1 pound ground turkey
5 cups raw sliced potatoes
1 onion, diced
1/2 tsp salt
14 1/2 ounce can green beans, undrained
10 3/4 ounce can cream of chicken soup

Crumble uncooked turkey into crock pot. Add potatoes, onions, salt and beans in layers in crock pot. Pour soup over top. Cover and cook on high for 4 hours.






 Overall, this was pretty good. It didn't look so good, but we really liked it. I think maybe a can of cheddar cheese soup or some shredded cheese might of been good too.
