Cheesy Burger Bake

I really like all recipes that include tots. How can tots be bad?!  This recipe turned out really good and will be added to our list of favorites.


No-Stick Cooking Spray
1-1/2 pounds ground round beef 
1 can (14.5 oz each) diced tomatoes, drained
1 envelope (1 oz each) dry onion soup mix
1-1/2 cups shredded cheddar cheese 
1/2 cup ketchup
1 egg
4 cups frozen shredded potato puffs


Preheat oven to 450 degrees. Spray 8x8-inch baking dish with cooking spray; set aside. Brown meat and drain. Stir in drained tomatoes and dry soup mix. Reduce heat to low. Cook 5 minutes, stirring occasionally. Remove from heat. Stir in cheese and set aside.


Beat ketchup and egg together in small bowl until well blended.  


Add to meat mixture; mix well. Spoon into prepared dish. Top with potato puffs, pressing lightly into meat mixture. Bake at 450 for 25-30 minutes or until potatoes are browned

Hamburger Potato Casserole

When I went to the grocery store last week, the 10 lb bag of potatoes was cheaper than the 5 lb bag. Weird right?! But I got the 10 lb bag to save some money. Now I have lots of potatoes and don't know what to do with them. I searched for potato casseroles on pinterest and came across this recipe. It looked very yummy and I had all the ingredients already so I cooked it up for dinner that night.

1 lb. ground beef
3 cups thinly sliced potatoes
1/2 cup chopped onions
1 can cream of mushroom soup
3/4 cup milk
1 1/2 cups shredded cheese
salt and pepper to taste


Preheat oven to 350 degrees.  Lightly grease a glass baking dish. In skillet, cook the onions and ground beef until done. Drain the grease. In a bowl, mix together the milk, soup, salt and pepper. Layer half of the potatoes, soup, cheese.



Top with the hamburger meat. Repeat with the rest of the potatoes, soup, hamburger meat and then the cheese. Cover with foil and bake for 1 to 1 1/2 hours at 350 degrees.

Mexican Casserole

I actually made this dish months ago, but am just finally getting around to posting. It was a very delicious meal and quick to prepare too.

1 1/2 lb ground beef
1 packet taco seasoning
1 can whole kernel corn, drained
1 can tomatoes and green chilis
2 cans french fried onions
1 package corn muffin mix
1/2 cup shredded cheddar cheese


Preheat oven to 400 degrees.  Brown ground beef and drain. Stir in taco seasoning, corn, tomatoes, and 1 can fried onions. Pour into greased baking dish.


Prepare corn muffin mix according to package directions. Spoon batter around edges of dish.


Bake at 400 degrees for 20-25 minutes. Top with cheese and remaining can of onions. Bake for a few more minutes to brown onions.

Wet Burrito Casserole

One more recipe from my personal stash. It was pretty good, however, I might use cream of chicken soup next time just because I'm not a mushroom fan at all. 


1 1/2 cups sour cream
1 can cream of mushroom soup
1 lb ground beef
1 medium onion, chopped
1 packet taco seasoning
16 oz can refried beans
1 package tortillas
4 cups shredded cheddar cheese

Preheat oven to 350 degrees.  Mix together sour cream and soup. Spread 1/2 of the mixture into bottom of baking dish. Brown ground beef & onions, Drain. Mix in taco seasoning and refried beans. Divide mixture into tortillas. Roll up and place in dish. Repeat for remaining tortillas and meat mix.


 Pour remaining sour cream soup mix on top. Sprinkle with cheese. Bake at 350 degrees for 30-35 minutes.

Texas Chili Bake

The days are starting to get colder so I need some good warm food. This recipe was delicious. I received it in the mail from a swapper over at Swap-Bot


1 lb ground beef
1 packet chili seasoning mix
8 oz can tomato sauce
1 cup water
16 oz can kidney beans, drained and rinsed
3 cups tortilla chips, slightly crushed
2 cups shredded cheddar cheese

Preheat oven to 375 degrees.  Brown ground beef and drain. Mix in chili seasoning, tomato sauce and water. Simmer for 5 minutes.


Stir in kidney beans, 1 cup chips and 1 1/2 cups cheese. Pour into baking dish.  Cover and bake at 375 degrees for 20-25 minutes. 


Top with remaining chips and cheese. Bake uncovered for 4-5 more minutes.

Simple Taco Casserole

This dish does not look very delicious but it sure was. Mike put some on a taco shell and it was good that way too.


2 pounds chicken breast or tenderloin
(I used ground beef instead of chicken because we had a lot of chicken this week)
1 16oz can refried beans
1 16oz can red beans
1 16oz can corn (drained)
2 cup shredded cheddar cheese
1 cup salsa
1/2 package taco seasoning.


Cook your meat and set aside. Mix refried beans, red beans, corn, salsa, 1 cup of shredded cheese and taco seasoning in a pan. Heat until cheese is melted. Preheat oven to 350 degrees. 


Place your meat on bottom of baking dish and cover with the bean mixture. Sprinkle remaining cheese over top.  Bake at 350 for 20-30 minutes.

Sloppy Joe Squares

Sorry in advance for the bad phone pictures. I didn't have my batteries for my camera charged and threw this together at the last minute.

These were so good! Marley usually won't eat regular sloppy joes, but she devoured these.


1lb ground beef
1can (15.5 oz) sloppy joe sauce
2cans (12 oz each) crescent dinner rolls

Preheat oven to 350 degrees.  Brown ground beef and drain off grease.  Mix in sloppy joe sauce and heat for a few minutes.  Place one can of crescent rolls on bottom of 9x13 inch baking dish. Press seams together.  


Pour meat mixture on top. Cover with other can of crescents.  Bake at 350 for 30-35 minutes or until dough is golden brown.  Cut into squares.

Italian Crescent Casserole

This recipe was amazingly good! It was another meal that was quick and easy to make and we ate it all up!


1lb ground beef, cooked and drained
1 cup garlic tomato pasta sauce
1can (8 oz) refrigerated crescent dinner rolls
1½ cups shredded Italian cheese blend
¼ teaspoon dried basil leaves


In skillet, mix cooked beef and pasta sauce. Heat over medium heat until warm.


Preheat oven to 375 degrees. Separate crescent dough into 8 triangles. Place dough in ungreased 9-inch glass pie plate (I used a small bowl) with the thick side in the middle.  Press dough seams together to make a crust. Sprinkle 1 cup of the cheese over dough.  Spoon meat mixture evenly over cheese.  Fold tips of dough over filling to meet in center; do not overlap. Sprinkle with remaining ½ cup cheese and the basil. Bake at 375°F 15 to 20 minutes.

Quesadilla Casserole

I had this recipe on my menu plan for a while. I finally got around to making it the other night and I'm so glad I did. It was so good!  I bet it would taste even better with shredded chicken instead of ground beef.



1 lb ground beef
1/2 cup chopped onion
2 tsp chili powder
1/2 tsp oregano
16 oz tomato sauce
1 can (15 oz) black beans, drained and rinsed
1 can (8 3/4 oz) whole kernel corn, undrained
1 can (4 1/2 oz) green chilies, undrained
6 flour tortillas (8 inch size)
2 cups shredded Cheddar Cheese



Preheat oven to 350 degrees. Brown ground beef and onion. Drain. Add tomato sauce, beans, corn and green chilies. Mix well. Stir in all of the spices. Bring to a boil, reduce heat low and simmer 5 minutes.

Spread 1/2 cup of the beef mixture on bottom of 9X13 pan. Top with 3 of the tortillas, overlapping as needed.

Layer with 1/2 of the remaining beef mixture and 1/2 of the cheese. Repeat with remaining tortillas, beef and cheese.

Bake at 350 degrees for 15 minutes or until heated through. Let stand 5 minutes before serving.

Crock Pot Pizza Burgers

I made these a few months ago and thought I had deleted the pictures (which aren't great, but better than nothing) But the other day I found them and since these were AMAZING I had to share them. 


1 lb ground beef, browned and drained
8 oz can pizza sauce
10 3/4 oz can cream of mushroom soup
1/2 cup chopped onions
1/4 tsp salt
1/8 tsp pepper
cheddar or mozzarella cheese


Mix all ingredients in the crock pot. Cover and cook on low for 1-2 hours. You could also cook the ground beef in the crock pot on low until no longer pink, drain, and then mix in the remaining ingredients.  

I sprinkled mozzarella cheese on top of mine before eating to make it more "pizza like"

Ranch Burgers

I have started going through my recipe box recipes instead of my pinterest board for this month. This recipe sounded delicious and is a great summer recipe because it's for the grill.

2lbs ground beef
1 packet ranch mix
1 egg, lightly beaten
3/4 cup crushed saltine crackers

In a bowl, mix all ingredients. Form into hamburger patties. Place patties on grill and cook to your liking.






Oh my gosh, these were awesome. Mike said they were the best burgers ever so that's saying a lot. We will definitely be making burgers this way every time from now on.
