Crock Pot Turkey Potato Dinner

1 pound ground turkey
5 cups raw sliced potatoes
1 onion, diced
1/2 tsp salt
14 1/2 ounce can green beans, undrained
10 3/4 ounce can cream of chicken soup

Crumble uncooked turkey into crock pot. Add potatoes, onions, salt and beans in layers in crock pot. Pour soup over top. Cover and cook on high for 4 hours.

Overall, this was pretty good. It didn't look so good, but we really liked it. I think maybe a can of cheddar cheese soup or some shredded cheese might of been good too.

Frito Chili Pie

My Walking Taco Casserole recipe is the most popular recipe I've posted. A few of you have commented saying you call it Frito Chili pie so of course I went searching to see what the difference is. Besides the obvious chili there really isn't much difference. Both dishes are very tasty.

Corn Chips
Chili
Cheese

Preheat oven to 350 degrees. Cover bottom of baking dish with chips. Pour chili on top. Cover with cheese and bake at 350 for 15-20 minutes or until cheese is melted.

I didn't include any measurements because I just used as much as I wanted based on the size of my dish.

Meatballs & Veggies

My mom used to make this when we were younger. I hated it. My brother still hates it. I like it now though and so does Mike. It's really easy to make and relatively inexpensive too. Also, you can either use store bought meatballs or make your own.

meatballs
1 package julienne potatoes
2 tbsp butter or margarine
1 1/2 cups hot water
1 1/3 cups milk
1 bag frozen mixed veggies

Mix potatoes, sauce mix, butter, water, milk and veggies in a pan. Heat to boiling. Stir frequently. Reduce heat, cover and simmer, stirring occasionally, for 20-25 minutes. Place meatballs on top. Cover and simmer for 10 minutes longer. Makes 4-6 servings.

Crock Pot Scalloped Potatoes & Hot Dogs

This is a recipe I had in my recipe box. I love hot dogs so this was right up my alley.

5.25 oz box au gratin potatoes
5 oz box scalloped potatoes
hot dogs

Mix potatoes as instructed on box.  Combine the two potatoes in the crock pot.

Cover and cook on high for 30 minutes. Mix in hot dogs and cook on low for 4-5 hours.

Pretty simple and very delicious!  I wasn't sure if you were supposed to cook the potatoes first because it didn't say that on my recipe card first, I did cook one box and the other I didn't and I couldn't tell a difference in taste so I would say you don't have to. Also for next time I would cut up my hot dogs before putting them into the crock pot.

Fill with sauce, cheese and pepperoni. Cook at 425 for 10-15 minutes.

Chili Dog Casserole

I actually 'pinned' this recipe to make more for Mike. I don't really like chili dogs, but I know he does.  Since we're still trying to get our house ready to put up for sale we were outside working all day and before we knew it, it was dinner time.  I threw this together in less than 10 minutes and then got back to cleaning.

2 (15 oz) cans chili with beans
1 (16 oz) package hot dogs
10 (8 inch) flour tortillas
1 (8 oz) package Cheddar cheese, shredded

Preheat oven to 425. Pour one can of chili on bottom of 9x13 baking dish.

Roll up hot dogs in tortillas and place in dish on top of chili.

Cover with other can of chili and cheddar cheese. Bake at 425 for 30 minutes.

Again, it was amazing!! I will definitely be making it again!

Meatball Sub Casserole

The pictures for this casserole make it look delicious. But, we did not like it at all. Okay, I'll give it some credit, everything was good except for the ridiculously soggy bread on the bottom. Now, if you like really soggy bread, then this is the recipe for you.

1 loaf Italian bread, cut into 1-inch thick slices
1 (8 oz.) package cream cheese, softened
1/2 cup mayonnaise
1 tsp. Italian Seasoning
1/4 tsp. pepper
2 cups shredded mozzarella cheese, divided
1-lb. pkg. fully cooked frozen meatballs, thawed
1 (28 oz.) jar pasta sauce
1 cup water

Preheat oven to 350 degrees. Mix cream cheese, mayonnaise, and italian seasoning.

Place bread slices on bottom of baking dish. (Toast bread if you don't want it so soggy)

Cover with the cream cheese mixture and mozzarella cheese

Mix meatballs, sauce and water in a bowl and pour on top. Cover with more mozzarella cheese. Bake at 350 for 30-35 minutes.

See looks really good huh? Yah, we didn't think so. The original recipe did suggest toasting the bread first so it wouldn't be so soggy, but of course I didn't see that tidbit of info until after I made it and stuck it in the oven.  Oh well!

Italian Sausage Melt

Last summer I got a really good deal on some italian sausage. However, it's been sitting in the freezer ever since because I didn't know what to make with it. Until, that is, I stumbled on this recipe for italian sausage melt.

1 1/4 cups Original Bisquick® mix
1/4 cup butter or margarine, softened
2 tablespoons very hot water
1/2 lb Italian sausage
1cup Alfredo pasta sauce
1cup shredded mozzarella cheese
2 tablespoons grated Parmesan cheese

Preheat oven to 400 degrees. Mix bisquick, water, and butter together in bowl.

Spread onto bottom of greased baking dish.

Cook sausage. Once cooked drain any grease there is and place on top of the bisquick.

Spread alfredo sauce on top. (I just realized while typing this up the recipe calls for 1 cup of sauce, I used the whole jar-oops!)

Top with cheese. (I didn't have any mozzarella so I used cheddar instead) Bake at 400 degrees for 25 to 30 minutes. Let cool for a few minutes before serving.

It was really good. It reminded us of biscuits and gravy. I will definitely be making this again with only 1 cup sauce and mozzarella cheese to see if it tastes any different.

Pepperoni Pizza Bread

I bought a bunch of frozen dough so of course, I searched pinterest for recipes. I found a recipe for this Pepperoni Pizza Bread here. Looks good!!

2 loaves (1 pound each) frozen bread dough, thawed
2 eggs, lightly beaten
1/3 cup olive oil
1/2 teaspoon each garlic powder
salt and pepper
1/2 teaspoon dried oregano
1 pound ground beef, cooked and drained
1 package (3-1/2 ounces) sliced pepperoni
2 cups (8 ounces) shredded part-skim mozzarella cheese
1 cup (4 ounces) shredded cheddar cheese

This makes 2 loaves.

Preheat oven to 375 degrees. Flatten out dough into a large rectangle.

In bowl mix together egg, oil, and seasonings.

Brush mix onto flattened dough. (save the rest of the mix for later)

Place your meat, cheese, pepperoni and any other veggies you want to add onto dough.

Roll up starting with a long side. Place on cookie sheet and brush with oil/egg mix.

Bake at 375 for 30-35 minutes.

Yum! This was even good for lunch the next day!
