Crock Pot Ground Beef & Biscuits

Last time we went to the library I checked out the Fix it and Forget it Cookbook. I went through and wrote down all the recipes that sounded good. This recipe was a little different. It was good but had a different taste to it. Not sure if it was the recipe itself or the fact that I used ground turkey instead of ground beef.


1 lb ground beef
1/2 cup chopped onions
2 tbsp flour
1 tsp salt
1/4 tsp pepper
1/2 tsp dried oregano
16 oz tomato sauce
2- 7.5 oz refrigerated buttermilk biscuits
2 cups shredded cheddar cheese


Brown ground beef and onions. Drain. Stir in flour, salt, pepper, oregano, and tomato sauce. Pour into crock pot. 


Sprinkle 1 cup of cheese on top then arrange biscuits on top. Cover with remaining cheese. Bake uncovered on high for 1-1 1/2 hours.



A few things for next time. I wouldn't use 2 tubes of biscuits. The ones in the middle were still doughy after I let it cook for almost 2 hours. I would just make a ring of biscuits around the outside instead. I also think this might taste better in a baking dish and baked in the oven. The biscuits just weren't cooked enough but some of the edge parts were burnt.

Tater Tot Tacos

I'm not really sure why these are called tater tot tacos. There's no taco shell, but there is taco seasoning so maybe that's why. Who knows?! All I know is that it was delicious!


1 packet taco seasoning
1 lb ground beef, browned and drained
tater tots
shredded cheddar cheese


Cook tater tots according to directions on package.


Brown ground beef and drain grease. Mix in taco season according to package directions. 


Place cooked tater tots on bottom of baking dish or bowl. Pour taco meat on top. Cover with shredded cheese. Place in warm oven until cheese is melted.

Mexican Pizza

My food of choice from Taco Bell is either the chicken quesadilla or the mexican pizzas.  When I made the taco bake a while ago it reminded me of the mexican pizza, but wasn't quite it. When I found this recipe on pinterest I had to try it. It was pretty good, but not an exact replica of the Taco Bell version.


1/2 pound ground beef
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon paprika
1/2 teaspoon black pepper
1/2 teaspoon salt
1 15-oz can refried beans
4 9-inch flour tortillas
1/2 cup salsa
2 cups cheddar cheese


Preheat oven to 350 degrees. Brown ground beef. Drain off fat. Mix in chili powder, cumin, paprika, salt and pepper. 


Place tortilla on cookie sheet. Place half of the refried beans and half the meat on a tortilla. Repeat steps to make other pizza.  Place another tortilla on top and cook for 10 minutes. Remove from oven and let cool slightly. Place half of the salsa on top and cover with cheese. 


Bake for another 5-10 minutes or until cheese is melted. Slice and serve.  This recipe makes 2 pizza.

Cheeseburger and Fries Casserole

This is another Pinterest recipe. It reminded me of summer and since the weather here is anything but summery I decided to make it. 


2 pounds lean ground beef (browned and drained)
1 can condensed cream of mushroom soup (10 oz)
1 can condensed cheddar cheese soup (10 oz)
1 package frozen, crinkle-cut fries (20 oz)
Desired hamburger toppings (ketchup, pickles, mustard and chopped tomato)


Preheat oven to 350 degrees. Mix mushroom and cheddar cheese soup in a small bowl. 


Spread cooked ground beef on bottom of 9x13 baking dish. 


Spread soup mix over top of meat. 


Place french fries on top. Cook at 350 for 45-55 minutes or until fries are golden. 



I think next time I will use smaller fries, maybe the shoe sting ones. The crinkle ones were still kind of 
soggy-ish and I like crispy fries.  Marley only ate the meat. She's been on a meat only kick lately. Silly girl!

Pizza Pie

This recipe is actually called Tebow Family Pizza Pie. I only know who Tim Tebow is because of everyone "tebowing" Otherwise I would be clueless to who he is. Oh well, his family makes some good food HA!


1 pound ground beef
1 envelope Italian-style spaghetti sauce mix
1 can (6 ounces) tomato paste
3/4 cup water
1 tube (12 ounces) refrigerated buttermilk biscuits
1/4 cup plus 1 tablespoon grated Parmesan cheese, divided
2 cups (8 ounces) shredded part-skim mozzarella cheese


Preheat oven to 400 degrees. Smoosh biscuit dough into bottom of greased baking dish. 


Cover with 1/4 cup parmesan cheese. 


Brown ground beef and drain. Mix in sauce mix, tomato paste and water. 


Bring to a boil. Reduce heat and simmer for 7-10 minutes or until thickened. 


Place meat mix as the next layer in your baking dish. Cover with mozzarella cheese and remaining parmesan cheese. Bake at 400 for 15-18 minutes or until crust is brown and cheese is melted.

Doritos Taco Bake

This recipe caught my eye on pinterest because it had doritos in it. My brother loves doritos and can eat a whole bag at one sitting so we always had doritos in the house growing up.

1 lb. hamburger
1 pkg. taco seasoning
8 oz. sour cream
1 pkg. crescent rolls (8)
1 can tomato sauce
1 can diced tomatoes (optional)
1 c. shredded cheese
Dorito chips


Brown meat and drain fat. Add diced tomatoes, taco seasoning, tomato sauce and a small amount of water. Simmer. 


Put crescent rolls in bottom of 9x13 baking dish. 


Layer meat mixture then sour cream. 


Next put cheddar cheese and crushed up doritos. 


Bake at 350 for 30 minutes. 



It was pretty good. Mike didn't like it the first night because the chips were really crunchy, but he took the left overs to work the next day and said it was better the 2nd day. I liked the crunchy chips. You win some, you lose some. HA!

Burrito Casserole

It was almost 7pm and I had no idea what to make for dinner. I had a pound of ground beef in the fridge so I decided to make hamburger helper. Well, we didn't have any milk so that idea didn't last long. So I hopped on Pinterest and searched to see what I could make with my already browned meat. It didn't take me long to find this recipe for Burrito casserole.


1 lb ground beef
1 (1.25 oz) package taco seasoning
6 flour tortillas
1 (16oz) can refried beans
2-3 cups shredded sharp cheddar cheese
1 can cream of mushroom soup
4 ounces sour cream


Preheat oven to 350 degrees. Mix mushroom soup and sour cream. 



Spread mix into bottom of baking dish. Tear up 3 tortillas and place on top. 


Brown meat and drain off grease. Add taco seasoning and refried beans. Mix well. 


Place half of the bean meat mix as next layer in baking dish. Repeat layers again. 


Put cheese on top and bake at 350 degrees for 20-30 minutes.



It was so good. Mike took one bite and said 'this is awesome' and I think the fact that he made me take a picture of him like this proves it's really good.

Taco Bake


I'm back for another recipe. This time it's Taco Bake.

1 lb ground beef
1 packet taco seasoning
Water (as called for on seasoning packet)
tortilla shells
1/2 cup salsa con queso
1 1/2 cup shredded cheese (I used cheddar)


Brown and crumble ground beef. Drain out fat.  Mix in taco seasoning and water according to directions on package.



Once meat is ready turn off heat and add the 1/2 cup salsa con queso and mix well.



Preheat oven to 350 degrees.

Place tortilla shell on cookie sheet or in a round cake pan.  Next add 1/3 of the meat and then 1/3 of the cheese then tortilla, continue layering until you end with cheese on top.




Bake at 350 for 15-20 minutes. Let cool for a few minutes then enjoy!
