Chili Dog Casserole

I actually 'pinned' this recipe to make more for Mike. I don't really like chili dogs, but I know he does.  Since we're still trying to get our house ready to put up for sale we were outside working all day and before we knew it, it was dinner time.  I threw this together in less than 10 minutes and then got back to cleaning.

2 (15 oz) cans chili with beans
1 (16 oz) package hot dogs
10 (8 inch) flour tortillas
1 (8 oz) package Cheddar cheese, shredded

Preheat oven to 425. Pour one can of chili on bottom of 9x13 baking dish.

Roll up hot dogs in tortillas and place in dish on top of chili.

Cover with other can of chili and cheddar cheese. Bake at 425 for 30 minutes.

Again, it was amazing!! I will definitely be making it again!

Our daily happenings

Just wanted to share some pictures from our regular day to day life.

3 Cheese Chicken Alfredo Bake

Here is the recipe for Three Cheese Chicken Alfredo Bake that I found on Pinterest.

1 (16-ounce) package pasta (I used farfalle/bowties)
2 (10-ounce) container alfredo sauce
1 (8-ounce) container sour cream
1 (15-ounce) container ricotta cheese
3 cups cooked chicken, chopped
2 large eggs, lightly beaten
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
2 cups mozzarella cheese

Preheat oven to 350 degrees.

Prepare pasta according to box. Drain and return to pot. Mix in everything except for mozzarella cheese. Spread mix in 9x13 baking dish.

Cover evenly with mozzarella cheese.

Bake at 350 degrees for 30 minutes until cheese is bubbly.

This was delicious!

Doritos Taco Bake

This recipe caught my eye on pinterest because it had doritos in it. My brother loves doritos and can eat a whole bag at one sitting so we always had doritos in the house growing up.

1 lb. hamburger
1 pkg. taco seasoning
8 oz. sour cream
1 pkg. crescent rolls (8)
1 can tomato sauce
1 can diced tomatoes (optional)
1 c. shredded cheese
Dorito chips

Brown meat and drain fat. Add diced tomatoes, taco seasoning, tomato sauce and a small amount of water. Simmer.

Put crescent rolls in bottom of 9x13 baking dish.

Layer meat mixture then sour cream.

Next put cheddar cheese and crushed up doritos.

Bake at 350 for 30 minutes.

It was pretty good. Mike didn't like it the first night because the chips were really crunchy, but he took the left overs to work the next day and said it was better the 2nd day. I liked the crunchy chips. You win some, you lose some. HA!
