Baked Chimichangas

A friend of mine posted a picture of these chimichangas the other afternoon. I don't think I've ever ate them before so I had to give them a try. They were so good!! 


8oz pkg. cream cheese
8oz. Pepperjack cheese, shredded (I used taco blend)
1 1/2 Tbsp. taco seasoning
1 lb. cooked chicken, shredded
8 flour tortillas 


Preheat oven to 350 degrees.  Mix first four ingredients together in a bowl. 


Separate filling on to taco shells. Fold up and place seam side down on a cookie sheet. 


Bake at 350 for 15 minutes.  Flip chimis over and bake for an additional 15 minutes.

Crock Pot Italian Chicken Freezer Meal

Back for another crock pot freezer meal that I prepared back in June.

4 boneless skinless chicken breasts
16 oz bottle italian dressing
1/2 cup parmesan cheese
4-6 diced potatoes
1/2 bag baby carrots



Just toss all ingredients into the crock pot and cook on low for 8-10 hours. If preparing to freeze, just put them all in a gallon size freezer bag and freeze, then when you want to cook it just thaw it a little and toss it in.




Super easy to make and very delicious!

Sloppy Joe Squares

Sorry in advance for the bad phone pictures. I didn't have my batteries for my camera charged and threw this together at the last minute.

These were so good! Marley usually won't eat regular sloppy joes, but she devoured these.


1lb ground beef
1can (15.5 oz) sloppy joe sauce
2cans (12 oz each) crescent dinner rolls

Preheat oven to 350 degrees.  Brown ground beef and drain off grease.  Mix in sloppy joe sauce and heat for a few minutes.  Place one can of crescent rolls on bottom of 9x13 inch baking dish. Press seams together.  


Pour meat mixture on top. Cover with other can of crescents.  Bake at 350 for 30-35 minutes or until dough is golden brown.  Cut into squares.

Spinach Patties

Mike had these spinach burgers at his friends house a few months ago. I finally got around to buying everything for them. I made them one day while he was at work so he could take them the next day for lunch.  He loved them. Marley even liked them too.


1 bag of thawed and well drained chopped spinach
2 egg whites
1 whole egg
½ c shredded cheese
½ c bread crumbs
1 tsp salt
½ tsp garlic powder

Mix all ingredients in a bowl.  Shape into patties and cook over medium high heat in a non stick skillet with a small amount of cooking spray. Cook until they are slightly brown and firm flipping as needed.
