Burrito Casserole

It was almost 7pm and I had no idea what to make for dinner. I had a pound of ground beef in the fridge so I decided to make hamburger helper. Well, we didn't have any milk so that idea didn't last long. So I hopped on Pinterest and searched to see what I could make with my already browned meat. It didn't take me long to find this recipe for Burrito casserole.


1 lb ground beef
1 (1.25 oz) package taco seasoning
6 flour tortillas
1 (16oz) can refried beans
2-3 cups shredded sharp cheddar cheese
1 can cream of mushroom soup
4 ounces sour cream


Preheat oven to 350 degrees. Mix mushroom soup and sour cream. 



Spread mix into bottom of baking dish. Tear up 3 tortillas and place on top. 


Brown meat and drain off grease. Add taco seasoning and refried beans. Mix well. 


Place half of the bean meat mix as next layer in baking dish. Repeat layers again. 


Put cheese on top and bake at 350 degrees for 20-30 minutes.



It was so good. Mike took one bite and said 'this is awesome' and I think the fact that he made me take a picture of him like this proves it's really good.

Bacon cheeseburger chicken

I'm back for another recipe. This one includes BACON and ranch. What's not to love?! 


6 skinless, boneless chicken breasts
1/4 cup teriyaki sauce
1/2 cup Ranch dressing
1 cup shredded Cheddar cheese
1/2 lb bacon (or bacon bits)


Preheat oven to 350 degrees. Put chicken in baking dish. Cover with ranch and teriyaki sauce. 


Put cheese and bacon on top. 

Bake at 350 for 35 minutes. 




Easy and quick to make. It was pretty good too.

Museum

This past Saturday we decided to head up to the Museum of Science and Industry in Chicago. The last time we went was before Mason was born and Marley's been asking a lot lately to go. We decided to get a year membership since we really like the museum and it was only about $30 more than what it would of cost us to just go once. We're already excited about taking our next trip up there.

I didn't get very many pictures because I didn't have batteries for my regular camera, and my phone battery was going dead, but I figured since we'll be back soon I'll have plenty of opportunities for pictures later.

Ice skating

Marley's bestie Gracie bought her ice skating lessons for Christmas. They go every Thursday for 45 minutes. It's only a month long, but I really appreciate Gracie's mom getting it for Marley, because she really enjoys it, and she loves spending time with Gracie.  Their first week, Brandi (Gracie's mom) picked up Marley and took them. She said Marley did really good, and Gracie kept falling down. The second week Gracie was sick so they didn't go =(.  This past week, Mike and I were able to go to the skate place to watch them. Marley was falling all the time and Gracie was doing awesome. I think Marley was just falling because it was fun and the other kids were doing it. Goof ball!

On the way home she crashed out. This was the same day that we saw Disney on Ice so she had a lot of skating in one day.
